I would much rather spend a 1/2 day cooking than a 1/2 hour. There is some thing about spending the time to really craft a meal that makes me happy. This means that most of my cooking time is spent on Sunday. I usually will make the meal we plan to eat and a few other things that will be eaten as leftovers during the week. Hey, if I am there making a mess in the kitchen I may as well get a few week night meals out of the way. This Sunday’s meal was homemade mac and cheese (this was from the freezer, made on a previous Sunday) pork with apricot sauce and a salad with lettuce, strawberries, glazed walnuts and parmesan cheese with balsamic dressing. Yum! I have my stepmom to thank for the salad recipe. She made it for us the last time we were visiting and I loved it so much that I had to make it myself. The funny thing is, the salad took this most time.
